Delicious, juicy homemade meatloaf with a sweet and tangy ketchup glaze. If you like comfort food, Grandma Joanna’s family recipe is sure to please your entire family.
Ingredients
Glaze Ingredients
½ c ketchup
2 tbsp brown sugar
2 tbsp apple cider vinegar
Loaf Ingredients
1 ½ lb ground beef
½ c onion, diced or ½ tbsp onion powder
2 eggs, whisked
¾ c milk (1 c for impossible meat)
1 tbsp Worcestershire sauce
1 tsp ground mustard
2 tsp kosher salt
⅛ tsp ground black pepper
1 c bread crumbs - Progresso Italian Style recommended
Preparation
Preheat the oven to 350º F.
In a large bowl, combine the wet ingredients, along with salt, pepper and dry mustard.
Add ground beef, onion to step 2 mixture and blend thoroughly.
Add bread crumbs and mix thoroughly.
Form into a loaf and place on a parchment covered baking sheet.
Bake loaf at 350º F for 40 minutes.
While meatloaf is baking - in a separate small bowl make the topping by combining the ketchup, brown sugar and vinegar. Mix well, set aside.
After the meat loaf has baked for 40 minutes, pull loaf out of the oven. Pour ketchup topping over the meatloaf.
Return loaf to the oven and bake for an additional 20 minutes.(temp to 165º F)
Remove loaf and let rest for 10 minutes before slicing and plating.
